Chicken Biryani l Quick and easy recipe

Ingredients
- 250g basmati rice
- 3-4 pieces of chicken or more if you like
- 1 1/2 tbsp salt or to taste
- 2 tbsp vegetable oil or ghee
- 1 1/2 tbsp chili powder
- 2 tbsp cumin and 2 tbsp coriander
- Half tbsp ground cinnamon and same amount of turmeric powder
- Half cup of yogurt or a little more
- 3-4 handfuls of raisins
- 2 1/2 tbsp caster sugar
- 2 onions( chopped)
- 2 gingers , grated
- 5 garlic cloves, chopped finely
- 7 shallots ( chopped)
Method/ Instructions
- Wash rice until the water runs clear, then leave it to soak in tepid water(salt added) for half an hour.
- Drain the rice and put it in a pan with enough water (2 cms above the level of rice).
- Bring water to boil, then cover and cook for about 10 minutes on low heat or until you witness holes appearing on the top layer of rice.
- Heat oil and add shallots,onions and ginger. Fry until the brown colour appears.Take a spoonful from it and keep it aside for garnishing.
- Add chicken and cook for about four to five minutes.
- Add spices and keep stirring for few minutes. Add yogurt and simmer and stir for 2 minutes.
- Add sugar, raisin and part-cooled rice(place a sheat of cloth under the lid) and cook on low heat for 9-10 minutes.
- Remove from heat and let it cool. Serve large spoonfuls garnished with shallots and onion mixture. Coca-cola can add more flavour, so give it a try. Enjoy!
